Apple Cider Streusel Bars

  • Shortbread Crust
  • ½ cup salted butter, melted
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 cup all-purpose flour
  • Apple Filling
  • 2 Granny Smith apples, peeled and thinly sliced
  • 2 TBS all-purpose flour
  • 2 TBS granulated sugar
  • 1 teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • 1 teaspoon instant apple cider powder
  • Oat Streusel Topping
  • ½ cup old-fashioned oats
  • ⅓ cup packed light brown sugar
  • ¼ teaspoon ground cinnamon
  • ¼ cup all-purpose flour
  • ¼ cup salted butter, cold
  1. Preheat the oven to 300.
  2. Grease an 8-inch baking pan. Set aside
  3. Make the crust: Stir the melted butter, granulated sugar, vanilla, and salt together in a medium bowl.
  4. Add the flour and stir until combined.
  5. Press the mixture evenly into the prepared baking pan.
  6. Bake for 15 minutes while you prepare the filling and streusel.
  7. Make the apple filling: Peel and slice apples thin, about ¼th in.
  8. Combine the sliced apples, flour, granulated sugar, cinnamon, nutmeg and apple cider powder together in a large bowl until all of the apples are evenly coated. Set aside.
  9. Make the streusel: Whisk the oats, brown sugar, cinnamon, and flour together in a medium bowl.
  10. Cut in the chilled butter with a pastry blender or two forks until the mixture resembles coarse crumbs. Set aside.
  11. Remove the crust from the oven, and turn the oven up to 350.
  12. Evenly layer the apples on top of the warm crust. Making sure to layer tightly so you can fit them all.
  13. Sprinkle the apple layer with streusel and bake for 30–35 minutes or until the streusel is golden brown.
  14. Remove from the oven and allow to cool for at least 20 minutes so that when you cut them they stay together nicely.
  15. This should give you 9-12 squares.
